Energy Oat Cookies

A wholesome, healthy snack, these oat cookies are naturally sweetened with bananas and coconut sugar, making them extra chewy. They strike the perfect balance between crunchy and soft, and have a lovely elements of cinnamon throughout. 

With the addition of Maca powder, these cookies provide a welcome boost of energy through a range of minerals and B-vitamins. Thanks to @sophie_gluten_free for this epic, yet oh so simple recipe! 

Ingredients

  • 6 small ripe bananas
  • 1/2 tsp baking powder
  • 1 tbsp cinnamon
  • 1 tsp coconut sugar
  • 1 tsp almond milk
  • 250g oats
  • 2 tbsp maca powder
  • 1 Tsp light custard powder
  • 6 drops of flavour drops or liquid sugar free sweetener (optional.)
  • TOPPINGS:
  • 25g chocolate of choice
  • 1 tbsp almond butter

Method

  • In a large bowl, add your bananas, almond milk, baking powder, cinnamon, coconut sugar and maca powder. 
  • Whisk until a smooth batter forms. 
  • Add custard powder and oats and stir with a spatula until well combined. 
  • Using an ice cream scoop, scoop your oat mix onto a baking tray lined with baking paper. 
  • Press down with a spoon to form a flat cookie shape. 
  • Bake at 180 for 25 minutes or until golden on both sides of the cookie. 
  • Melt 25g of chocolate and drizzle over the cookies. 
  • Repeat with almond butter. 
  • Pop into the freezer for 10 minutes to set the topping, alternatively, pop into the fridge for one hour. 
  • Enjoy as a pre/post work out snack or healthy snack!
