Lemon and Blueberry Baked Oats

Yet another absolute masterpiece from @eatwellwithgabs ! Trade in your regular bowl of porridge for these deliciously moist baked oats with fresh blueberries and zesty lemon.. oh yeah and protein for a side of gains.

Ingredients

  • 1/2 cup oats
  • 1/2 banana (mashed)
  • 1/2 cup almond milk
  • 1 tbsp Funktional Foods Protein Vanilla Protein Blend
  • 1 tbsp chia seeds
  • 1/2 tsp baking powder
  • Zest of 1/2 lemon
  • 1 tbsp lemon juice
  • 1/4 cup blueberries
  • Optional Toppings: coconut yoghurt, extra blueberries, hemp seeds

Method

  • Mix all your ingredeints together in a large bowl and pour into a oven proof ramekin and bake for 20-25 mins at 180 (fan)
  • Top with yoghurt, extra blueberries and hemp seeds
